Easy Merlot Blend Romesco Sauce

Flavor-packed Romesco is one of the most versatile sauces you can add to your entertaining repertoire and it’s a snap to make using jarred fire roasted red bell peppers. Ideal as a condiment over grilled meats and chicken, Spain’s most famous sauce can also be served over cream cheese, ricotta or goat cheese as a colorful, easy entertaining spread for toasted crostini or crackers. It also makes for an exotic alternative to basic marinara when served over pasta or in a lasagna.

Note: Traditional recipes call for the addition of Sherry Vinegar to the mixture, but when using jarred bell peppers that vinegar brightness is already present from their being packed in brine.

Easy Merlot Blend Romesco Sauce


12 oz jar Fire Roasted Red Bell Peppers, drained and chopped coarsely
¼ cup Shallot, minced
¼ cup raw, slivered Almonds; minced
1 ½ Tbs Winemaker’s Pantry ™ Spice Pairing for Merlot
½ tsp crushed garlic
¼ cup Extra Virgin Olive Oil
¼ cup chopped Parsley, loosely packed


Combine all ingredients except the parsley in the bowl of a food processor and pulse until combined. The mixture should slightly chunky, not pureed. Stir in the chopped parsley. Taste for seasoning adding a little sea salt and or more Merlot Spice Pairing to taste.
